Kickstart your morning with this ingenious, waste reducing Coffee Fruit Bar
How Brisbane-born I Am Grounded are converting the often discarded coffee cherry into plant-based, gluten-free cereal bars.
The process of creating your morning cup of coffee is waste-producing, fact. But for every byproduct, unique opportunities present themselves to convert this waste into valuable consumer goods. Chaff (the dried skin of a coffee bean) is used to make everything from takeaway cups to car parts, while the wastewater from washing the beans is used to generate electricity. Now, a Kickstarter campaign by an Australian based company has turned it's attention to the often-overlooked coffee cherry, creating tasty morning bars for your commute.

According to the company, approximately twenty billion kilos of coffee fruit is wasted each year, accounting for about 0.2% of the world's CO2 emissions. Shockingly, when you break this down by coffee drinker, this amounts to a whopping 57kg for each and every one of us caffeine addicts. The Queensland company, I Am Grounded utilise the cherry in their bars, offering a delicious way to cut down on excessive waste.
Sourced from farms in Colombia, I Am Grounded's bars are offered in two flavours— Lemon and Coconut and Espresso Peanut Butter and are stocked at supermarkets across Australia. The Kickstarter campaign looks to extend the distribution channels of the bars, at the same time as increasing the scale of production and make some fundamental efficiency improvements to their manufacturing processes. Further targeting their eco-friendly appeal, packaging for the bars will be undergoing a redesign and will be made of 100% compostable material. Long term, the company hopes to make a few ingredient changes to improve allergen risk and lower the calorie count.

With three weeks left of their campaign, the Kickstarter is just under halfway to their AU$16,000 goal. If the campaign becomes fully funded, I Am Grounded will release a brand new flavour featuring Cocoa and Almond Butter. Interested backers looking to try the Coffee Fruit Bars can buy a box of six bars for AU$25. For further information or to back the campaign, you can visit I Am Grounded's Kickstarter page.
